Creamy mashed potatoes and Thai curry combined in crispy potato cakes

1 bag Lamb Weston Supreme™ Homestyle Mashed (N88)
4 Eggs
1 cup Tapioca flour
2 tbsp Thai curry paste
Directions
Cook potatoes to manufacturer’s specifications.
In a mixing bowl combine cooked potatoes and remaining ingredients, fold until well incorporated.
Transfer mixture into piping bag. Pipe into hot, oiled pan in 2 inch circles.
Cook 2 minutes on each side until lightly browned and firm.
