Gumbo Skewers


3 oz. LW Private Reserve® Diner Slices® (item S88)
4 oysters, fried
4 shrimp, grilled
1 oz. crabmeat chunks
3 oz. bell pepper
3 oz. onion
Cajun seasoning to taste
2 wooden skewers

Gumbo Sauce
2 Tbsp. butter
1/2 cup red onions, chopped
1/2 cup green bell pepper, chopped
1/2 cup canned okra, chopped
2 Tbsp. tomato paste
1 cup tomato juice
2 Tbsp. green olives, chopped
1/8 tsp. cayenne pepper
1 tsp. kosher salt
1-1/2 cups beef broth
1-1/2 tsp. granulated sugar
Yield:  16 oz.


  1. In a medium size heavy sauce pan, over medium heat, melt the butter and cook the onions, bell pepper and okra.
  2. Add the remaining ingredients, bring to a boil and simmer for 5 minutes.
  3. Use an immersion blender to combine and liquefy the sauce.
  4. Check for seasoning.

Assemble Gumbo Fries Plate:
  1. Prepare 3 oz. LW Private Reserve® Diner Slices® (item S88) according to package directions.
  2. Toss potato slices in Cajun seasoning.
  3. Skewer the following in order:  potato slice, shrimp, onion, crabmeat, bell pepper, oyster, onion, shrimp, bell pepper, crabmeat and potato slice.  Repeat on second skewer
  4. Fill ramekin with 3 oz. Gumbo Sauce for dipping.
