Sweet Potato Sour Cream Cheesecake



  • Ingredients
  • 2 cups graham cracker crumbs
  • 5 Tbsp. unsalted butter, melted
  • 4 Tbsp. brown sugar, light
  • 2 lbs. cream cheese, softened
  • 1 1/2 cups sugar, granulated
  • 1 tsp. vanilla extract
  • 4 each eggs, large
  • 1 1/2 cups Sweet Things® Original Mashed Sweet Potatoes (Item #M0007)
  • 3 Tbsp. lemon juice
  • 2 cups sour cream


Preheat oven to 325°F. Combine first 3 ingredients until well blended. Form crust into greased 10" springform pan. Bake at 325°F for 8 minutes to brown crust. Beat cream cheese, sugar and vanilla at medium speed until smooth. Add eggs one at a time until well blended. Add mashed sweet potato and 1 1/2 Tbsp. lemon juice. Beat until well blended. Pour into baked crust. Bake at 325°F for approximately 45-60 minutes until center is slightly jiggly. Beat until well blended. Combine sour cream, 1/2 cup sugar and 1 1/2 Tbsp. lemon juice and whisk until smooth and pourable. If it is too thick to pour, add a little water. Gently pour sour cream mixture over top of cheesecake amd bake for 10 more minutes. Remove from oven and let cool to room temp. Refrigerate over night. Unsnap ring and carefully run a paring knife around outer edge of cheesecake. Remove sides and bottom of pan and place on serving platter. Be sure to make each cut with a hot knife.
