Southwestern Potato Salad

 

Ingredients

 
  • 3 1/2 cups Alexia® Oven Roasted Redskin Tri-Cut Dices (Item AX586
  • 3 Tbsp. scallions, sliced
  • 1/4 cup fire roasted corn
  • 2 Tbsp. fire roasted poblano peppers, diced
  • 1/4 cup cotija cheese
  • 1/4 tomatoes, diced
  • 1 cup sour cream
  • 2 Tbsp. lime juice
  • 2 Tbsp. cilantro, chopped

Directions

Preheat oven to 400°F. Roast redskin dices according to instructions on package. Allow to cool. Mix all ingredients in a mixing bowl and adjust seasonings as needed. Serve.
