Shepard's Pie with Sweet Potatoes, Chicken and Vegetables



  • 1 cup leeks, diced
  • 1 cup onion, diced
  • 2 cups carrots, diced
  • 2 Tbsp. carrot
  • 2 each garlic cloves, minced
  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • 1 cup heavy cream
  • 50 oz. (wt.) prepared turkey
  • 4 cups chicken, roasted/diced
  • 1 cup peas
  • 1 cup corn
  • 2 lbs. Sweet Things® Original Mashed Sweet Potatoes (Item #M0007)
  • 6 oz. cheddar jack cheese, shredded
  • To Taste salt and pepper


Heat butter and olive oil in a sauce pan. Add first 5 ingredients, season with 1 tsp. salt and sauté for 2 minutes. Cover pan, lower heat and sweat vegetables for 6 minutes. Add cream, simmer for 3 minutes or until thick. Add gravy, diced chicken, peas and corn. Stir to combine and heat. Adjust seasoning with salt and pepper. Place contents into a greased 8X11 casserole dish. Spread mashed sweet potatoes over the top. Spinkle with shredded cheese. Bake at 350°F for 20 minutes or until cheese fully melts.
