Red Pepper Dressing

 

Ingredients

  •  2 cups red peppers, roasted
  • 1/4 canola oil
  • 1/2 cup red wine vinegar
  • 1 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 4 tsp. garlic, chopped
  • 1 tsp. Dijon mustard

Directions

Combine all ingredients into a blender and purée. Allow to rest for 20 minutes for flavors to bloom. Chill and serve.
