Marinara Sauce

 

Ingredients

 
  • 1 each onion, diced
  • 1 each carrot, shredded/minced
  • 2 Tbsp. olive oil
  • 2 Tbsp. butter
  • 6 Tbsp. garlic, chopped
  • 6 oz. (wt.) tomato paste
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt
  • 28 oz. (wt.) tomato, crushed
  • 28 oz. (wt.) tomato sauce
  • 2 tsp. basil, dried
  • 1/2 cup basil, fresh

Directions

Finely mince the carrot and onion. In a pot, heat olive oil and butter and cook carrot and onions until soft. Add in the garlic and cook for about 1 minute. Add tomato paste and cook for 3 minutes. Add salt, pepper, crushed tomatoes, tomato sauce and dried basil. Mix well. Simmer for a minimum of 20 minutes. Stir in fresh basil and remove from heat.
