Loaded Potato Salad Bake



  • 3 1/2 cup Oven Roasted Redskin Tri-Cut Dices (Item AX586)
  • 1/2 cup white onion, sliced
  • 1/4 cup bacon, cooked/diced
  • 1/2 cup sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup cream cheese, whipped
  • 1/4 cup scallions, sliced
  • To Taste kosher salt and cracked black pepper


Preheat oven to 350°F. In a 12" sauté pan, cook bacon and strain off a portion of grease. Add onion. Once softened add remaining ingredients except for half of the cheddar cheese and scallions. Mix well and place in a 9X13 pan, top with remaining cheese and bake for 15 minutes. Remove from oven, garnish with scallions and serve warm.
