Fire Roasted Salsa

 

Ingredients

  • 1/3 cup red bell pepper, roasted/diced
  • 1/3 cup green bell pepper, roasted/diced
  • 1/3 cup yellow onion, roasted/diced
  • 1 cup tomatoes, diced
  • 2 Tbsp. lime juice
  • 2 Tbsp. jalepeno pepper purée
  • 3 Tbsp. cilantro, chopped
  • 1 Tbsp. sugar, granulated
  • 1/2 tsp. cumin, ground
  • 1 tsp. salt 1
  • 4 tsp. black pepper, cracked

Directions

Pulse all ingredients in a food processor 3 or 4 times. Adjust seasonings if needed. Allow to rest for 20 minutes for flavors to bloom.

Yield

Approximately 2 1/2 cups
