Fiery Sweet Potates with Red Curry and Coconut



  • 2 lbs. Sweet Things® Original Mashed Sweet Potatoes (Item #M0007)
  • 3/4 cup coconut milk
  • 2 Tbsp. red curry paste
  • 1 Tbsp. ginger purée
  • 1/2 tsp. salt
  • 1/2 cup dark brown sugar
  • 2 Tbsp. scallions, sliced
  • 2 Tbsp. shredded coconut, toasted


Preheat over to 350°F. Combine first 5 ingredients in a mixing bowl. Sprinkle with the top with brown sugar. Remove and garnish with toasted coconut and scallions. Drizzle with coconut milk.
