Chorizo and Sweet Potato Empanadas



  • 1 lb. chorizo
  • 2 cups Sweet Things® Original Mashed Sweet Potatoes (Item #M0007)
  • 1/2 cups yellow onion, diced
  • 1cup roasted corn
  • 1/2 cup red bell pepper, diced
  • 4 oz. Monterey Jack, shredded
  • 2 Tbsp. cilantro, chopped
  • 16 each empanada dough disks


Remove casing from chorizo and dice. Over medium heat, sauté chorizo in 1 Tbsp. olive oil until brown and crisp. Add onion, corn and bell pepper. In a mixing bowl combine sweet potato mash, cheese and cilantro. Add chorizo mixture and mix well. Place 3 Tbsp. of filling in the center of empanada disk. Fold disk and seal with press, fingers or fork. Repeat. Fry empanadas at 350°F for 3 minutes or until golden. Serve.
