Breakfast Hot Dish with Sweet Potato Puffs



  • 1 1/2 lbs. bacon, diced
  • 3/4 cup ham, diced
  • 1 each onion, diced
  • 6 each eggs, lightly beaten
  • 1 1/2 cups Sweet Things Mini Tater Puffs® (Item #L0094)
  • 2 cups cheddar cheese, shredded
  • 1 1/2 cups sour cream
  • 1 1/4 cups swiss cheese, shredded


Preheat oven to 350°F. In a large skillet, cook bacon and onion until bacon is crisp. Drain. In a mixing bowl, combine remaining ingredients, adding the bacon mixture at the end. Trasfer mixture to greased 9X13 casserole dish. Bake uncovered for 35-40 minutes or until eggs are at desired consistency.
