BBQ Chicken Salad with Corn, Avocado and Poblano Dressing

 

Ingredients

 
  • 12 oz. Sweet Things® Sweet Potato Fries
  • 2 lbs. BBQ chicken Breast, 1" dice
  • 2 cups sweet corn
  • 2 each avocados, diced
  • 1/2 cup onion, diced
  • 1/2 cup red pepper, diced
  • 1 cup tomato, diced
  • 1/2 cup scallions, sliced
  • 1/4 cup parsley, chopped
  • 1 1/2 cups creamy poblano dressing

Directions

Combine all ingredients together except for sweet potato fries. Serve with chopped bibb lettuce and sweet potato fries.
